How to Substitute Beets for Rice
Creativity can come from anywhere if you let it in. Sometimes it's an inspiration based on the ingredients you have on hand, sometimes it comes from the desire to mimic something you don't have.
Flavors can be manipulated, textures are woven into the dish, and before you know it you have created something new. It isn't better, and it certainly isn't original; it's just different. It has evolved. Instead of recreating something from before, you find yourself with a new sense memory to build upon for the next (re)creation.
This dish melds everything I love about poke with everything I love about ceviche. Ahi tuna, toasted seaweed, avocado, sesame, lime, and soy, scooped up with crispy rosemary-garlic roasted beet chips. All because I didn't have any rice but I did have beets.
