Give New Life to What's Leftover

I love transformation. When last nights dinner makes its way back onto the table, it's not what it used to be. What was once chicken tinga and butternut squash tostadas is now given new life: breakfast chilaquiles!

Preserving what's leftover not only saves a ton of money, but repurposing former meals is so much fun. Sometimes it becomes something beautiful, and sometimes it looks like I threw together a bunch of random stuff (I usually call that meal goulash). One thing always remains true, though: when I take the opportunity to exercise my creativity and make something from what I have, I always feel good about it.

So stock up your pantry. Armed with the bread of your choosing, some tortillas, rice quinoa or other grains, a sauce (or a variety of them), eggs, and/or a handful of vegetables (kale for me please!), you can do anything.
