Unforgettable Cornmeal Pancakes
In the 7.5 years that we've been together, Andrew and I have never made pancakes for breakfast. I guess I forget about pancakes because I've had so many forgettable cakes in my lifetime.
While Bisquick did make it easy to put breakfast on the table, it missed the mark (like so many other pre-mixed cooking shortcuts) in taste and quality.
What's funny is pancakes are so easy to make without a mix! A little flour, baking powder, milk, and eggs is all you need to make delicious, fluffy cakes.
I had a bunch of cornmeal in the pantry so I decided to make cornmeal pancakes. They're gritty and textured, airy and light, savory with a touch of sweetness.
Top it off with a quick blueberry and lemon zest compote, which was a perfect excuse to break out the cherry pit liqueur that has been aging in the closet.
This meal makes me really excited to be growing my own corn this year.
